Kutchi Dabeli | How to make Kutchi Dabeli | Delicious Dabeli by Sandipta's Cookery

                    

Ingredients -  For dabeli mix -   2 nos          Dry red chili  1 tsp           Coriander seeds  ½ tsp          Cumin seeds  ½ inch        Cinnamon sticks  3 nos          Cloves  1 pinch of   Asafoetida    For red chili - garlic chutney -   8 nos             Dry red chili ( soaked in water)   4-6 pods of    Garlic   3 tbsp            Water  Salt to taste   For sweet chutney -   ½ cup      Water  ¼ cup      Sugar  A spoonful of tamarind pulp   For potato  mixture -   1 cup        Boiled & mashed potatoes  1 tbsp       Oil  Prepared dabeli masala as required  Chopped coriander leaves  Some tutti-frutti  Coconut powder  Pomegranate pearls  Water as required   For masala peanut -   ¼ cup      Roasted peanut  ½ tsp       Oil  ½ tsp       Dabeli masala  ½ tsp       Sugar  Pinch of salt


Preparation time -  15 minutes

Cooking time      -   15 minutes

Ingredients -

For red chili - garlic chutney -


8 nos             Dry red chili ( soaked in water) 

4-6 pods of    Garlic 

3 tbsp            Water

Salt to taste


For sweet chutney -


½ cup      Water

¼ cup      Sugar

A spoonful of tamarind pulp


For potato  mixture -


1 cup        Boiled & mashed potatoes

1 tbsp       Oil

Prepared dabeli masala as required

Chopped coriander leaves

Some tutti-frutti

Coconut powder

Pomegranate pearls

Water as required


For masala peanut -


¼ cup      Roasted peanut

½ tsp       Oil

½ tsp       Dabeli masala

½ tsp       Sugar

Pinch of salt


Other ingredients - 

 

2 tbsp    Butter

Pav as required

Sev as required

Chopped onion


Procedure -

Making Dadeli Mix -


1.In a pan add all ingredients listed under " dabeli mix " and dry roast.Transfer the roasted masala to another container and let it cool. Then transfer to a mixer grinder and grind well. 

(একটি প্যানে "ডাবেলি মিক্স" এর নীচে তালিকাভুক্ত সমস্ত উপাদান যুক্ত করুন এবং শুকনো খোলায় ভাজুন। ভাজা মসলা অন্য পাত্রে স্থানান্তর করুন এবং এটি ঠান্ডা হতে দিন।  তারপরে পেষকদন্তে স্থানান্তর করুন এবং পিষে নিন)

Making Red Chili - Garlic Chutney -


Take soaked red chili, garlic, salt and grind to a smooth paste. Then add water to make a thick paste. 

(পেষকদন্তে ভিজিয়ে রাখা লাল লংকা, রসুন, নুন নিন এবং মসৃণ ভাবে পিষে নিন।  তারপরে একটি ঘন পেস্ট তৈরির জন্য জল যোগ করুন)

Making Sweet Chutney -


Take water in a pan and add sugar, tamarind pulp, and let it cook for 5 minutes. Once cooked , allow it to cool at room temperature. 

(একটি কড়াইতে জল,চিনি, তেঁতুলের কাঁথ যোগ করুন এবং ৫ মিনিট অপেক্ষা করুন। রান্না হয়ে গেলে ঘরের তাপমাত্রায় ঠান্ডা হতে দিন)

Making Potato Mixture -


1.In a pan heat some oil, add dabeli mixture and stir on a medium flame. Then add mashed potatoes, water, salt to taste and mix well and cook for 3-4 minutes. 

(একটি প্যানে তেল দিন, ডাবেলির মিশ্রণটি দিন এবং একটি মাঝারি শিখায় নাড়ুন।  তারপরে মাখানো আলু, জল, স্বাদ মতো নুন যোগ করুন এবং ভালভাবে মিশ্রিত করুন এবং ৩-৪ মিনিটের জন্য রান্না করুন)

2. Transfer it to a plate and flatten. Garnish with chopped coriander leaves, coconut powder, tutti-frutti and pomegranate pearls. 

(এটি একটি প্লেটে স্থানান্তর করুন এবং সমতল করুন।  ধনেপাতা কুচি, নারকেল গুঁড়ো, টুটি-ফ্রুটি এবং ডালিম  দিয়ে সাজিয়ে নিন)

Making Masala Peanut -


In a bowl add all the ingredients listed under " masala peanut " mix well and keep aside. 

(একটি পাত্রে "মশলা চিনাবাদাম" এর নীচে তালিকাভুক্ত সমস্ত উপাদান ভাল করে মিশিয়ে একপাশে রেখে দিন) 



Ingredients -  For dabeli mix -   2 nos          Dry red chili  1 tsp           Coriander seeds  ½ tsp          Cumin seeds  ½ inch        Cinnamon sticks  3 nos          Cloves  1 pinch of   Asafoetida    For red chili - garlic chutney -   8 nos             Dry red chili ( soaked in water)   4-6 pods of    Garlic   3 tbsp            Water  Salt to taste   For sweet chutney -   ½ cup      Water  ¼ cup      Sugar  A spoonful of tamarind pulp   For potato  mixture -   1 cup        Boiled & mashed potatoes  1 tbsp       Oil  Prepared dabeli masala as required  Chopped coriander leaves  Some tutti-frutti  Coconut powder  Pomegranate pearls  Water as required   For masala peanut -   ¼ cup      Roasted peanut  ½ tsp       Oil  ½ tsp       Dabeli masala  ½ tsp       Sugar  Pinch of salt


Assemble -


1.Slice the pav so as to create a cavity in it. The stuff it with sweet chutney, red garlic chutney, potato mixture. 

(অল্প গহ্বর তৈরি করে নিন পাওতে।  এতে মিষ্টি চাটনি, রেড গার্লিক চাটনি, আলুর মিশ্রণ দিন) 


Ingredients -  For dabeli mix -   2 nos          Dry red chili  1 tsp           Coriander seeds  ½ tsp          Cumin seeds  ½ inch        Cinnamon sticks  3 nos          Cloves  1 pinch of   Asafoetida    For red chili - garlic chutney -   8 nos             Dry red chili ( soaked in water)   4-6 pods of    Garlic   3 tbsp            Water  Salt to taste   For sweet chutney -   ½ cup      Water  ¼ cup      Sugar  A spoonful of tamarind pulp   For potato  mixture -   1 cup        Boiled & mashed potatoes  1 tbsp       Oil  Prepared dabeli masala as required  Chopped coriander leaves  Some tutti-frutti  Coconut powder  Pomegranate pearls  Water as required   For masala peanut -   ¼ cup      Roasted peanut  ½ tsp       Oil  ½ tsp       Dabeli masala  ½ tsp       Sugar  Pinch of salt


2. Add chopped onion, masala peanut. Heat a pan with butter and roast the dabeli on both sides. 

(পেঁয়াজ কুচি, মশলা বাদাম যোগ করুন।  মাখন দিয়ে একটি প্যান গরম করে দু'দিকে ডাবেলি ভাজুন)

3. Take the hot dabeli and deep into the sev. 

(গরম ডাবেলি নিন এবং ঝুড়িভাজাতে ডিপ করুন )

4. Serve it.

(একটি সিদ্ধ ডিম নিন এবং মাঝখানে প্রায় অর্ধেক চেরা করুন) 5. Stuff the onion - garlic- red chili flakes mixture. (পেঁয়াজ-রসুন- রেড চিলি ফ্লেক্সের মিশ্রণটি দিন) 6. Add a few drops of salt water, fried oil, and tamarind water. (কয়েক ফোঁটা নুন জল, ভাজা তেল এবং তেঁতুলের জল দিন) 7. Finally garnish with coriander leaves and serve. ( সবশেষে ধনে পাতা দিয়ে সাজিয়ে পরিবেশন করুন)
